Tequila Guacamole & Hot Nacho Cheese Sauce

I apologise for the not so professional looking picture, however I never intended to write a blog post on this; but on Friday evening I made guacamole and hot cheese (cinema style!) sauce, and it was just too amazing not to share. Now when I say amazing, I mean amazing. My boyfriend and I planned to have this as a starter to our Friday night meal, but it was that good we literally ate a family sized bag of Doritos each and just completely skipped the main meal. I learnt the guacamole recipe on my recent trip to Mexico, and the cheese sauce recipe I found on Pinterest (original link here) and all I can say is thank you, thank you, THANK you to the lady that posted this.

This recipe will provide two (large) portions.

Guacamole

Ingredients:

3 ripened avocados

Half a medium sized tomato

1 lime

Large handful of coriander

Half a white onion

1 – 2 fresh green chilies (add dependant on your taste)

Shot of Tequila

Method:

Mash your avocado in a bowl, the consistency is entirely up to you. I like quite a blended guacamole, personally – however some people prefer it chunky. It really doesn’t matter, it tastes fantastic either way.

Chop the rest of your ingredients, making sure that you remove the chilli seeds from the chilli. Again, it’s up to you how you want to go about this – I prefer to finely chop my vegetables (especially the onion), however you may prefer a more chunky option.

Add all ingredients to the avocado (don’t be shy!) and mix together. Once mixed, squeeze in the juice of 1 lime and add a shot of tequila. This may sound strange, but I promise you it works so well. Many of us – myself included – can’t stand the taste of Tequila on its own, however I implore you to try it in your guacamole. Please don’t worry, it doesn’t taste like a shot on a night out! If you’re still apprehensive, you could always add a small capful and build it up if you like the addition.

Nacho Cheese Sauce

Ingredients: 

2 tbsp butter

2 tbsp plain flour

1 cup milk

1/2 tsp salt

7 cheese slices (yes, the cheese slices you add to burgers)

Method:

Melt the butter in a saucepan, gently stirring in flour and milk. Stir until your mixture thickens.

Once starting to thicken up, add in your salt and cheese slices, ensuring you are continually stirring.

Once all the cheese has melted and the ingredients have blended, remove from the heat and serve.

The sauce will thicken upon standing.
